I think you just answered your own question there, Ken. It's likely you
floated
the valves by over-revving the motor, the stock springs were unable to keep

Not likely an adjustment thing. Maybe insufficient clearance on setup of
the heads,
maybe floating at high rpm.

No, the rev limit is based on the springs. Don't go beyond the stock rev
limit
with stock springs. Put in a set of Crane thermocool springs at 145 lb seat
pressure
and you should have no trouble running to 6500 rpm.

The hydraulic lifters are responsible for getting the proper lift out of
your cam
while not holding the valves open when the lifter is off the lobe.
The adjustable pushrods allow for changes in valve and cam position.
The theory is to adjust the lifter plunger into the center of it's travel
with the valve
closed.
What you've stated about this guy you've been paying to work on your bike,
I would shy away from him. Good encouragement to learn it for yourself.
I can set you up with manuals if you can't get them locally.
