A similar experience, the wiring harness to the engine temp sensor was
zip-tied to the frame without much slack, and the vibration of the engine
caused
the wire to break inside the insulation, right at the terminal, inside the
connector.
Invisible problem, was hard to find.

If it's belching black smoke, then you're certainly having the erratic open
circuit in the
head sensor loop (ECM thinks it's forty something degrees below zero)

Only way to be sure is to have the scan tool and recreate it, record the
event, and review the
head temp data.
